Mexican Chicken Casserole
2 cups coarsely crushed corn chips, divided
1 (10 3/4 oz.) can cream of chicken soup
1 10 oz. can enchilada sauce
3 cups cubed, cooked chicken
1/2 cup finely chopped onions
1 cup shredded sharp cheddar cheese
Sour cream optional
In greased baking dish combine 1 cup corn chips & remaining ingredients except for cheese.
Bake at 375° for 30 mins. Top w/remaining corn chips & cheddar cheese. Bake another 5 minutes until cheese is melted.
Makes 5 servings, but it can be doubled easily.
